I've had so much fun making these a couple of times over the past holiday week I just had to share how easy they are to make.
Ingredients:
2 cups white chocolate chips
6-8 peppermint candy canes
2 Tablespoons Vegetable Oil
24-30 regular sized Marshmallows
24-30 lollipop sticks
First, smash up the candy canes, this is when little helpers can easily get involved. We placed ours inside a large ziplock and used our meat tenderizer to hammer. Big Brother has on his "smashing" face.
Next, mix the white chocolate chips with the 2 tablespoons of vegetable oil and melt according to the directions on the bag. Melt carefully, white chocolate can clump easily. I love using a double boiler and the vegetable oil helps keep it fluid.
Put a marshmallow on a stick and dip into the white chocolate. Immediately roll the marshmallow in the crushed peppermint.
Repeat with the rest of the marshmallows. Let the marshmallows cool upright on a cookie sheet lined with parchment paper.
After they cool you can either enjoy the treats yourself or bag them up to make a sweet gift.
I gave our bagged goodies with hot chocolate mix. And, of course I couldn't resist trying them myself with a nice cup of dark, hot chocolate.
You'll probably have a little bit of left over white chocolate, you can either continue with another batch or use in another recipe. It inspired me to try out something, but that's another post another day.
