For our post we focused not only on an ingredient our state is commonly known for, but also an all time favorite in our house: maple syrup.
I grew up in a family that made maple syrup, and used it often in almost everything and anything, (moving way beyond pancakes of course!): coffee, fruit salad, oatmeal, cookies, etc.
Recently, we started using it to make a maple cinnamon cream cheese spread. The boys love several different flavored cream cheese spreads we usually buy at the grocery store, so this was just an easy homemade tweak. To begin with, I tweaked an old recipe I had for maple cream cheese frosting, making it a little less sweet.
As this is a "no cook" recipe it's also really easy for kiddos to be involved.
Ingredients:
4 oz. plain cream cheese (we use a reduced fat variety)
1 1/2 Tablespoons Maple Syrup
1 teaspoon cinnamon
Directions:
1. Remove the cream cheese wrapper and soften the cream cheese slightly. (This can either be done by letting it sit on the counter for a little bit or placing it in the microwave for 30 seconds or less.
2. Place the cream cheese into a large bowl. (We find this recipe works best with our stand mixer, but it could also work in a large bowl with a handheld mixer.)
3. Add the maple syrup and cinnamon.
4. Mix the ingredients on high speed.
As soon as it's fully mixed, it's done! Store in a small container in the refrigerator with either a lid or saran wrap. You should be able to store it about a week.
My boys enjoy it for breakfast on mini-bagels or for an afternoon snack on graham crackers. It's also great on muffins!
I'm definitely planning on keeping some in the fridge for those busy mornings when school begins again.
