Oatmeal Maple Raisin Cookies

This month we've loved experimenting with different varieties of oatmeal cookies. We've had a lot of fun playing around with our favorite recipe, adding in and taking away different ingredients.

One of the favorite varieties we've come up with is this Oatmeal Maple Raisin Cookie.


It's a cookie with a classic oatmeal cookie taste, except it has a maple twist. We did use a dry, maple sugar in addition to maple syrup. Sometimes this sugar is called "indian sugar" and can be found in baking stores and some larger grocery stores.  
Little Brother has eagerly become my new kitchen helper, across all meals of the day. As soon as I start doing something in the kitchen he loves bringing in his stool to stand on and help. Making cookies and running the mixer is especially one of his favorite jobs.


Oatmeal Maple Raisin Cookies

Ingredients: 
1/2 cup brown sugar
1/2 cup maple sugar
1/2 cup maple syrup
1/4 cup shortening 
1 egg
1 cup flour
1 tsp cinnamon
1/2 tsp nutmeg
1/4 cup water
1 tsp vanilla
3 cups oats (not instant or quick oats)
1 tsp salt
1/2 tsp baking soda
1 cup raisins

Directions: 
1. Preheat the oven to 350 degrees fahrenheit. 
2. Mix the brown sugar, maple sugar, maple syrup, shortening, egg, water, and vanilla into the mixing bowl on medium speed. 
3. Add in the oats, flour, salt, baking soda, cinnamon, and nutmeg into the mixing bowl. Mix the batter on low speed until it is throughly mixed. 
4. Gently mix in the raisins. 
5. Scoop the cookie dough on to a tray in large, heaping teaspoons about 1 to 2 inches apart. 
6. Bake the cookies for about 12-15 minutes. They will look a little soft when you take them out.
7. Leave the cookies on the tray for a few moments, and then move to a wire rack. 

I was recently given a set of these scoops for my birthday, and I can not believe I've ever baked with out them before! 

Of course waiting for the cookies to be done can be the hardest part. 

We enjoyed how simple and yummy these cookies were. They had a great, classic taste!
