Even though summer is officially "over" we still love to grill as much as we can. In fact, you'll probably find us grilling until there's at least an inch of snow on our deck.
And although we still enjoy some of the basics, we also like to make some recipes that remind us more of fall. This grilled kielbasa dinner is perfect with all the yummy veggies coming from our fall CSA.
It's also really easy to assemble and cook!
Ingredients:
One package kielbasa
2-3 carrots
1/2 a head of green cabbage
1 large onion
5-6 medium potatoes
Directions:
1. Wash and chop all veggies into 1/2 inch to 1 inch pieces. (Potatoes are best cubed, while the other vegetables are best sliced into pieces.)
2. Cut the kielbasa into 1/2 inch pieces.
3. Combine all ingredients onto a large rectangle of tinfoil. (we find it usually works best to use extra pieces of tin foil and have two medium sized packets versus one large packet.)
4. You can drizzle with olive oil, although we find that the steam of the vegetables and the juice of the kielbasa flavor everything nicely without any additional seasonings or oil.
5. Lay another piece of tinfoil roughly the same size over the top of the mixture and fold up the edges of the tinfoil so that you have a sealed packet.
6. Cook on a medium grill for about 20 minutes. If possible, it's good to turn the packet at least once during the cooking time.
7. Once done, remove the packet from the grill and open carefully to allow the steam to slowly come out. Inside you'll fins a mix of steamed vegetables and savory kielbasa cooked perfectly. (Not done? Fold the packet back up and continue to cook for a few more minutes.)
8. Enjoy! We find this to be a pretty family friendly meal as the kids love kielbasa, cooked carrots, and potatoes. They both do tend to not eat the cabbage, although will usually have a few bites with encouragement.
And the best part is the clean up: there is almost none!
