Kids Cook: Chocolate Chip Craisin Oatmeal Cookies

It's been a while since we posted a recipe, and I can't believe we haven't posted this recipe yet. This has been our "go to" cookie recipe for almost a year now.


We love the yummy goodness of the mix of the craisin, chocolate, and oatmeal flavors. They mix together and bake up easily. And they always disappear quickly. 
The inspiration for the recipe came from this old, well loved cookbook. I was pretty excited a few years ago when this book resurfaced in some things from my Mom's house. I loved this book as a kid!


We made a few tweaks to the "Oatmeal Raisin Cookie Recipe" and came up with this yummy recipe of our own. 
(Ingredient Note: Usually I use softened butter for shortening, this time I used coconut oil as
Big Brother needs to be dairy free right now. Both work well.) 

Ingredients: 
1 cup brown sugar
1/2 cup granulated sugar
1/4 cup shortening 
1 egg
1 cup flour
1 tsp cinnamon
1/2 tsp nutmeg
1/4 cup water
1 tsp vanilla
3 cups oats (not instant or quick oats)
1 tsp salt
1/2 tsp baking soda
1 cup craisins
1 cup chocolate chips (we love to use a dark chocolate chip in this recipe)


Directions: 
1. Preheat the oven to 350 degrees fahrenheit. 
2. Mix the brown sugar, granulated sugar, shortening, egg, water, and vanilla into the mixing bowl on medium speed. 
Big Brother loves helping to measure the ingredients and has gotten really good at scooping and pouring. 
3. Add in the oats, flour, salt, baking soda, cinnamon, and nutmeg into the mixing bowl. Mix the batter on low speed until it is throughly mixed. 
A little reminder that sometimes it gets messy when kids cook too, but as long as everyone stays positive it stays fun. 
4. Gently mix in the chocolate and craisins. 

5. Scoop the cookie dough on to a tray in large, heaping teaspoons about 1 to 2 inches apart. 

6. Bake the cookies for about 12-15 minutes. They will look a little soft when you take them out.
Sometimes the waiting is the hardest part. Little Brother, who is mastering using the word "Mama" to get my attention stood by the oven pointing to the cookies and saying my name over and over. 
7. Leave the cookies on the tray for a few moments, and then move to a wire rack. After the cookies cool, enjoy!!
