Easy Blueberry Cobbler

There are a lot of different recipes and opinions out there for how to make a cobbler. Do you put the fruit on the bottom and add the batter on top? Or do you make the batter for the bottom and put the fruit on top? And although we've tried many of them, this quickly became our new favorite go to recipe this summer when we have fresh berries (or cherries) in the house and we want a warm, cobbler treat.


It's fresh blueberry season, which is one of our favorite times of year! We love baking with blueberries,freezing  them for the winter, and of course eat them just in their natural, yummy state. 



Just looked what happened when I was trying to take a picture of our beautiful berries . . . even full of dinner and dessert my kiddos couldn't resist a heaping bowl at their level. 



Easy Blueberry Cobbler
(easy enough that kids could help too!)

Ingredients:
1 stick (1/2 cup) butter
1 cup all purpose flour
1 cup sugar 
1 teaspoon baking powder
1 cup milk
1 teaspoon vanilla extract

2 cups (1 pint) fresh blueberries (washed)
1/2 cup sugar
1 tablespoon flour


Directions: 
1. Preheat the oven to 350 degrees Fahrenheit.
2. Put the butter into a 9 x 13 pan and place it in the oven while the oven is warming up to melt the butter. (Remove after about 5 minutes, you don't want the butter to brown.)
3. In a medium bowl mix the 1 cup flour, 1 cup sugar, and baking soda with a whisk.
4. In a measuring cup mix the milk and vanilla extract. Add the milk mixture and mix until smooth (it kind of looks like a pancake batter.)
5. Pour the batter into the pan on top of the butter. Do not mix.
6. In a small bowl mix the blueberries with the 1/2 cup sugar and 1 tablespoon of flour until the berries all are slightly coated.
7. Sprinkle the berries on top of the batter mixture, again do no mix. There will be some extra sugar left in the bowl, sprinkle that on top too.
8. Bake in the oven for about one hour, remove when a tooth pick inserted into a batter area comes out clean.
9. Enjoy warm with either whip cream or vanilla ice cream!


We particularly enjoy the edges in our family where the butter and batter make a slightly crisp, caramelized piece. We've also tried this with several other yummy fruits and berries over the summer. We encourage you to get creative and enjoy!
